Growing up, celery used to be one of those vegetables that was forgotten unless it was eaten with something - like in soups or with a dip.
Which is such an oversight because celery is a modest modern superfood with so many health benefits, the top ones including...
Anti-inflammatory - Celery contains luteolin, a flavonoid that reduces inflammation. It also contains phytonutrients, which reduce inflammation in the blood vessels and GI tract. Lots of blogs and studies cite celery as being helpful for the GI tract.
Blood pressure regulation - Celery contains pthalides, which lower blood pressure by reducing stress hormones in the blood. This relaxes the muscles around the arteries, allowing vessels to expand, which reduces pressure.
Antioxidants - Celery contains at least 12 kinds of antioxidant nutrients, which protect cells from free radical damage.
Celery is also rich in vitamins A, C, and K, plus minerals like potassium and folate which are all important for healthy skin and bones.
This can improve cardiovascular health and reduce high blood pressure. Free radical damage also contributes to aging, so in that sense Celery can be seen as having anti-aging.
Digestive health - Celery contains fiber, potassium, and vitamin C, which support digestive health.
